Sabbath was educated at Christ Church College, Oxford University (1608 to1611, BA degree). He was ordained as a Deacon of Newnham Courtney Parish Church on June 7, 1612, and served in that capacity until 1615, when he became Curate of Tarvin Chapel (now St. Andrews Church). On September 14, 1621, he was appointed Vicar of Tarvin Chapel. and he served in that capacity until 1662. He and his family lived in the half-timbered house next to the Chapel. The Civil War (Oliver Cromwell and Parliament vs. King Charles I) occurred during his vicarship and several battles occurred in the immediate Tarvin area. For a period of time some of the fighting forces were even garrisoned in the Chapel. In 1646, he signed an oath of allegiance to King Charles I, who was convicted of treason and beheaded in 1647. In 1662, Sabbath was ejected from the Church of England for refusing to sign an oath of conformity to the "standard" Anglican church service. By all accounts, he was a "staunch religious puritan (and) a very grave person".
