For a time, Ernestine worked at the NMSU Nutrition Program, and served on Our Lady of Guadalupe Prayer Center's board of directors. She was an accomplished homemaker, baker, seamstress, and gardener. She was often described as a strong matriarch with a spirited attitude. Things simply got done when she was around. She set high standards for herself and expected nothing but the best from those around her. In addition to valuing the finer things in life, she and her husband enjoyed travelling and visited Bermuda, Brazil, Costa Rica, Equador, Hawaii, Mexico, Morocco, North Africa, Panama, Paraguay, Peru, Portugal, and Spain.
