Joseph Graber was the fifth child of John Graber (1805-1869) and Barbara Klopfenstein (1796-1867), who were French émigrés.

On the 11 September 1866, Joseph married Catherine Dill (1848-?), the daughter of John Dill (1814-1879) and Eleanor Clinkenbeard (1814-1897), in Van Buren Co., Iowa. Joseph and Catherine had at least five children between 1867 and 1878: George, Etta, twin boys Kit and Frank, and Mary.

Joseph was a farmer in Iowa and North Dakota. After the death of his wife, Catherine, Joseph went with his sister Nellie and her husband, William Stanford, to Moosejaw, Saskatewan, Canada, where they had a farm. According to the childhood memories of his grandson, Kermit, Joseph "hunted wolves for fun" in Moosejaw, bringing some of this skins as gifts to his grandsons. Joseph eventually returned to North Dakota, living with his son Kit and his family. At some point in 1919 or 1920, Joseph left North Dakota with his sister Nellie and her family, moving to Spokane Co., Washington.

Joseph died in Spangle, Spokane Co., Washington on 27 January 1929 from cancer of the rectum. He was buried on the 30 January 1929 at Fairmount Memorial Park in Spokane, Spokane Co., Washington. His grave is unmarked.
