Virginia came to Dubuque with her parents, Asahel G. Knapp and Mary Amanda Holtzberry Knapp when she was 3 years old. Records gathered by Peggy Clayville indicate that Julien Dubuque Simplot had traced Virginia's heritage back to the "Good Ship Mayflower" from records given to him by Virginia's father, Asahel Knapp. Virginia was a student of Alexander Simplot in school. They married Nov 11, 1866 in Dubuque, Iowa, and had ten children. Virginia Knapp Simplot Obituary, Dubuque Telegraph Herald 10/27/1904:

"Mrs. Virginia Simplot, wife of Mr. Alexander Simplot of this city, died at Finley hospital on Wednesday evening at 7:20 o'clock. She had been ill for about five weeks, but her condition was not considered serious until a fortnight ago. Nervous prostration developed into paresis from which she died. Mrs. Simplot, who was the daughter of the late Aseel Knapp, was born in Hebron, Ohio on February 11, 1847. She had been, however, a resident of Dubuque since her third year. She was married on Nov. 11, 1866 to Mr. Simplot, who, with the following seven children survive her: Mrs. H.M. Metz of Milwaukee, and Mrs. Frank Tschirgi of Sheridan, Wyoming, Harry A., Alvin R., Orville J., and Julien D., all of Dubuque, and Roy V. of Milwaukee. She also leaves two sisters, Mrs. Alice Bennett of this city, and Mrs. Bertha Zengle of Guttenberg. The funeral will be held at her late residence on Saturday afternoon at 2:30 o'clock. The service will be conducted by the Rev. Dr. Robinson. Interment at Linwood cemetery."
