Salt Lake Tribune, The (UT) - May 27, 2003. Obituary: Betty Kay Minchey 1937 ~ 2003, ST. GEORGE, UT - Betty Kay Whytock Minchey, age 65, died May 24, 2003 in St. George, Utah. She was born June 21, 1937, in Salt Lake City, UT a daughter of Hugh L. and Inez Beers Whytock. She married Eldon J. Minchey Aug 26, 1954. Betty was a homemaker, as well as a business partner with her husband in their construction company more than 40 years. She retired and moved to St. George, 1996, after being diagnosed with cancer. Betty loved to spend time with her children and grandchildren, especially at their summer home in Strawberry Valley. She enjoyed making quilts and was able to give one of her beautiful creations to every one of her children, grandchildren, great-grandchildren, as well as many friends. After she became very ill, she found out there was another great-grandchild on the way and was worried that there was not a quilt for this one. She relaxed when she realized she had made an extra one for some reason. Betty was her children's inspiration. She taught them honesty and integrity, and demanded from them their very best. Betty had a beautiful singing voice and enjoyed singing with her husband and their friends. She is going to be missed deeply by all. The family would like to give a special thanks to her doctors and to Hospice.

Betty leaves behind her husband, Eldon J. Minchey ; four children, Pamela Ann (Allen) Boling, Emery, Michael J. Minchey , Salt Lake City, Robert J. (Pamela) Minchey , Woods Cross, Wesley J. (Jill) Minchey , Cedar City; 15 grandchildren; two great-grandchildren; sister, Diane Axtell, Murray; and two brothers, Garry Whytock, St. George, Wayne Whytock, Murray.

She is preceded in death by her parents and youngest daughter, Karen Kay Minchey (John) Vatne. Services will be Fri. May 30, 2003 11:30 a.m. Orchard LDS 10th Ward Chapel, 55 E. 350 N, North Salt Lake. Visitations, Wed. May 28, 2003, 6-8 p.m. Spilsbury & Beard Mortuary, 110 S. Bluff St, St. George; Thurs. May 29, 2003, 6-8 p.m. Russon Brothers Mortuary, 295 N. Main, Bountiful; and Friday, May 30, 2003, 10-11 a.m. prior to services at the chapel. Interment, Bountiful City Cemetery, 2224 S. 200 W, Bountiful. Directors, Spilsbury & Beard Mortuary, (435) 673-2454.
