Gilbert owned the Easton Tavern in the Town of Easton, Adams County, Wisconsin, from 1947 to 1957. In 1958 he started the charcoal plant on County Highway E in the Town of Adams, and ran that business for a number of years. After selling the charcoal plant, he became an operating engineer of heavy equipment for a construction company in the Milwaukee area.
