Known to her family as "Minnie", her parents were immigrants from the Hannover region of Germany. She grew up with 4 brothers and 2 sisters on a farm in Johnson County, NE and learned to speak both English and "Plattdeutsch". She married Fred Zabel and moved to a farm outside Athol, Kansas in 1918, where they sucessfully raised 11 children.

Minnie and Fred lost their once productive farm to the Dust Bowl of the 1930's and moved to Cook, NE, where they had a kitchen garden and chicken coop. She lived independently until age 88, when a back injury and diabetes forced her into a nursing home. She stayed active in her Church and the lives of her family, remembering everyone's birthday with a letter and handmade gift.
