George William who was called William in the 1850 Census was a butcher who came from Baden, Germany. The census listed his occupation as butcher. He and his family were living in Manchester Borough, Allegheny County, PA. Manchester Borough later became part of Allegheny City, which became the North Side when annexed by Pittsburgh.

By the 1860 Census, William moved his wife and children to McClure Township, Allegheny County, most likely on a farm. Again his name was given as William Eckert. William was 40 and his wife 39. His occupation was listed as butcher/gardener. Apparently he had begun working in the Gass family business of fruit growing.
