Elihu was the 6th of 7 children (3rd son) born of Joseph Hosford (1715-1761) and his wife Eunice Beach (1716-1797 or 1799): His siblings were: Eunice (Unis) (b. 1738), Anne (b, 1740), Joseph (1743-1819), Mindwell (1745-1829), Aaron (1747-1818), and Obadiah (1756-1822).

Elihu married, at Hebron, Tolland County, Connecticut, April 3, 1770, Abigail Chamberlain (1750-1783) by whom he had 3 children: Abigail (1772-1779), Anna (b. 1775), and Elihu (b. 1776). In a 1771 Province of New York Census, Elihu was listed as one of twenty-nine heads of families then at Thetford, Glouchester County, New York (now Orange County, Vermont).

In late July 1777, Elihu served as one of two Sergeants in Captain William Heaton's Militia Company that had been called up on duty during the Stratford (now in Orange County. Vermont) alarm of July 20th. Elihu served 11 days during this call up. Captain Heaton's Company assisted the people of Stratford in their retreat, and in guarding prisoners and the country's cattle, horses, sheep and etc. A small fort had been built at Stratford for the protection of the settlers in Maidstone, Guildhall and Lunenburg. The fort was under the command of Captain Ward Bayley of Maidstone. Owing to Bayley's active opposition to the Indians and Tories in the area, an attempt was made to capture him, without success. The raiding party did, however, take a few prisoners, who were taken to Canada.

On September 20, 1777, Elihu engaged as one of three Sergeants in Captain William Heaton's Company, Colonel Peter Olcott's Vermont Militia Regiment. Captain Heaton's Company was in service 36 days until discharged by the General commanding the Northern Department of the American Army. During this service, Captain Heaton's Company was in the Battle at Saratoga, New York and was present at the surrender of British General John Burgoyne and his army, October 1777.

Elihu served for 12 days as one of four Sergeants, along with his brothers Privates Aaron and Joseph, in Captain William Heaton's (Thetford) Company of Vermont Militia from August, 1780 to April 1781, in the alarm at Royalton and twice to Newbery. In October 1780, an enemy force (British and their Indian Allies) raided Royalton, Windsor County, Vermont, burnt the town, and captured a number of people and carried them to Canada.

Elihu married second, at Thetford, Orange County, Vermont, January 25, 1784, Mary Marble (Marvin) (1761-1820) by whom he had 8 children: Abigail (b. 1786), Mary (Polly) (b. 1787), Jared (b. 1789), William (b. 1781), Lydia (1794-1864), Arethusa (1796-1861), Ralph (1799-1830), and Lucena (b. 1801).
