Martin's father, Hans, was the son of Ole Evenson. Following the Scandinavian tradition of Patronymic naming, Hans went by Hans Olson (or Oleson, son of Ole) for the first half of his life. Later, perhaps becoming accustomed to the western system used in America, he adopted the usage of the last name used by his father and switched to Evenson. By this time, some of their older children were adults and continued using Olson. That is why Martin Olson has a different surname than the one used by his parents.
