Every document I've ever seen, except the gravestone, says he was born October 29, 1845. Even his Texas death certificate says so. His obituary says he was 90 when he died. The 1850 census says he was 5 that year, the 1860 census says he was 15, the 1870 says he was 24, the 1880 says 34. The 1900 census says "Oct, 1844", age 55, but clearly he was not the informant since his father's birthplace is listed as "Ireland" and mother as unknown. 1910 says age 64, 1920 says 74, 1930 says 84. His brother, Simeon, was born 12/7/1848 six weeks after William's gravestone's purported 1848 birthdate. William enlisted in the Confederate Army in October, 1863. I'll bet it was on October 29th, his 18th birthday.
