Coy was born on March 23, 1921 in Clifton, Idaho. She was the daughter of Ruth Porritt Lewis and Amos Lewis. Coy spent her early years in southern Idaho. She graduated from Downey High School in 1939. After graduation, Coy moved with her family, to Brigham City, Utah where she worked at the Hollywood Ice Cream Parlor. In 1940, Coy met the love of her life Delbert "Deb" Hadfield. Deb and Coy were married on March 24, 1940. During World War II, Deb served in the US Army stationed in Mississippi. Coy was able to be with him during much of his time in the service.
Later, after raising her family, Coy was employed at Thiokol Chemical Corporation and retired in 1986.

However, Coy's true vocation was golf. She was a member of the Brigham City Golf and Country Club, the Ladies Northern Region Golf Association and the Utah State Ladies Golf Association. She continued to play golf until she fell on the golf course and fractured her hip at the age of 81. Although this ended her playing days, she remained an avid fan and spectator. Coy was also a fan of the Utah Jazz, especially during the Stockton and Malone years. She loved to play cards, particularly Bridge and Pinochle. She belonged to several card groups and played often. It became a favorite pastime after she "retired" from golf. Coy also loved her garden. Every year, her friends and neighbors looked forward to a great crop of tomatoes. Her roses were outstanding.

Coy is survived by her daughter, Karen Hadfield Eyre (Tony), Salt Lake City, Utah; her son, Jody Hadfield (Susan), Alta Loma California; grandchildren, Alyson Eyre (Judson Armstrong), Jonathan Eyre (Brett), and Olivia Hadfield; and her great-grandchildren, Ayden Armstrong, and Ian Armstrong. She is also survived by her sisters, Arta Nielson, Erva Kennedy, Thora Bean, Gloria Landvatter, and Opal Lawrence; and her brother, Ray Lewis.
She was preceded by her parents and her brother, Doyle Lewis.
