Ernest was the son of Paul Anton Arendt Sr (1889-1963) and Susie Ann Neu Arendt (1889-1970). He was the oldest child and grew up in a family of 12 other siblings (3 more died as children) on a farm near Lindsay, Texas.

Ernest was inducted into the US Army on 10 March 1941 at Camp Wolters, Mineral Wells, Texas. He was part of the D-Day Invasion in June of 1944 and subsequently was assigned to the 3rd Army Medical Tank Battalion under General Patton.

After WW2 Ernest decided to make a career of the Army and served in the Korean Conflict. Ernest later served in Alaska, Germany, and Japan. His final post was Fort Sill, Oklahoma where Ernest retired from the service in 1972 as a Staff Sergeant.

On 31 Dec 1949, Ernest married Mabel Edna Hinchcliffe Green (1900-1977) a widow, in Oklahoma City. They resided in Lawton Oklahoma after Ernest retired from the military. Mabel passed away in 1977 and Paul later married Katherine Sheidt Snyder who survived Ernest when he passed away in 1983 in Arkansas City Kansas.
