She was born in Forest Grove, Oregon to the parents of Mark Moses Aspinwall and Eva Christie Thomas.
She attended Oregon State University in Corvallis, Oregon where she met her husband Richard Joe Nelson and was married on December 18, 1949 at the Clatskanie Methodist Church.
They made their home in Beaverton, Oregon where they owned and operated vegetable greenhouses and raised 5 children until moving to Nyssa, Oregon in 1960 to be peppermint farmers.
As an avid rock-hounder, she spent many hours exploring. Eileen also enjoyed snowmobiling, gardening, leather crafting, and the outdoors with her husband where together they built a cabin in Sumpter, Oregon.
She was an active member of The First Assembly of God Church in Ontario, Oregon for many years. Her last remaining years were enjoyed in Boise, Idaho at a senior living center.
Survivors include: Her daughter Christy and son-in-law Roger Wann of Boise, Idaho; daughter Kathy and son-in-law Jim Brittingham of Ontario, Oregon; son Joe Nelson and daughter-in-law Mimma of Fort Atkinson, Wisconsin; daughter Carol and son-in-law Joe Freiberg of Kooskia, Idaho and son Mark Nelson and daughter-in-law Victoria of Boise, Idaho.
Grandchildren are: Trenton and Heidi Wann (Albert); Joshua, Benjamin, Thomas and Michael Brittingham; Nicholas and Adam Nelson; David, Mark and Emily Cruson; Kristin Nelson (Bergfeld), and Nathaniel Nelson and 24 great grandchildren.
