Eileen Elizabeth Beach, age 58, passed away at Gundersen Health System of La Crosse surrounded by her family on February 10, 2016. She was born on July 11, 1957 in Chicago, IL, to Lawrence and Colleen (Moore) Collins. Eileen attended La Crescent High School and following graduation attended Viterbo University where she received her teaching degree. She married Jim Beach on August 2, 2002. Eileen taught at Caledonia High School and she was a member of Cedar Valley Lutheran Church. Eileen truly lived life to the fullest through her family, friends and grandchildren, her four cats, sewing and travel.
She is survived by her husband, Jim; children: Carson, Ann and Brian Betsinger; stepsons: Dan (Shelly) Beach and Tony (Becky) Beach; three grandchildren; her mother Colleen Collins; siblings: Mary Schindlbeck, Laura (Tom) Fogli, Kevin Collins and Daniel Collins; six nieces and seven nephews; special friends Cheryl Doering, Sue Rose, Kathy Chenault, Debbie Heide Sullivan and many other friends.
Eileen was preceded in death by her father.
Burial in the Cedar Valley Lutheran Church Cemetery.
