Son of Edward Tillman Matchan and Mary Etta Sara Emma Leach. First husband of Estelle Brooks. Father of Nanette Matchan who married Jerry Smyre. Known as Jake to friends and family.

CATFISH STEW

12 lbs dressed fish (any kind)
12 cans (large) Carnation Milk
10 cents onions
10 cents Irish potatoes
1 box black pepper
1 box salt
1 lb white meat [salt pork]
4 dozen eggs [boiled and chopped]

Put meat in pot and fry grease all out then take the bacon out. Peel onions and potatoes, chop together then put in grease. Add a little water, cook potatoes and onions nearly done before adding fish. When fish is done, pull fire (just to a boil) add boiled eggs (chopped) and sweet milk, also water to desired effort. Add pepper and salt according to taste. Keep stew hot but do not boil after adding milk. This makes enough stew for about 30 or 36 people. If stew is boiled after milk is added it causes it to curdle.
