George's mother, Martha Meredith (nee, Hurst), second married David Baker c1870 and thus George is found in the 1880 census, age 17, with his mother and STEP-father, David Baker. The census taker gave George, and his brother William, the surname Baker and now George's memorial is in the surname Baker when he truly is the son of John Meredith. Whoever created this stone marker, and had it placed at the cemetery, must not have known his true identity or else they would have used George's proper surname.
The 1880 census looks like this (and you can tell the two older boys are set above the Baker children but not given their surname of Meredith by the census taker... they are also the only children born in MO because their mother, Martha Hurst, married their father, John Meredith, in Oregon County, Missouri on 31 May 1860 and then removed to Arkansas where she second married David Baker):
