Life's Work/Service/Interests: Jeannette was a self-proclaimed Air Force brat, which provided her opportunities to live in Florida, North Dakota, West Germany and New Mexico, where she graduated from Alamogordo High School. After high school, her family moved to Mapleton, Utah, where she met her best friend and eternal companion, P. Joe Knight. They were married in the Manti Utah LDS Temple on February 5, 1994. Jeannette was a very creative and talented artist; she was well known for her stylized fish drawings. She enjoyed designing and sewing clothing, painting and sketching. She had a passion for antique books and book repair. Jeannette loved being in her flower gardens, hiking and camping. Although Jeannette wasn't blessed with children of her own, she had a deep love for her nieces and nephews. Beloved Jeannette Lauritzen Knight joined her Heavenly Father and her earthly mother on January 1, 2014. She passed away suddenly and unexpectedly at Castleview Hospital in Price, Utah.
Survived By: Her husband of almost 20 years, P. Joe Knight; her father, Michael Lauritzen of Woodland Hills; five siblings: Steve Lauritzen (Therese) of Woodland Hills; Cindy Bird (MarDee) of Santaquin; Ben Lauritzen (Elisa) of North Salt Lake; Tammy Reavis (Daren) of Spanish Fork; and Kathleen Wright (Spencer) of Woodland Hills.
Preceded In Death By: Her mother, Susan Hatch Lauritzen, whom she missed every day.
