Daughter of Jacob Mintun and Rebecca Rardin. Elizabeth married George Franklin Thomas on 8 June 1837, in Athens County, Ohio. George and Elizabeth joined the migration with her parents to Louisa county, Iowa in 1838.

Elizabeth was the mother of 11 children. Her first three were born in Wapello. The family traveled to Mercer county, Pennsylvania in 1846 to visit George's parents for awhile. Not long after returning from that trip, George sold his interests in Wapello and moved the family to New Castle, Lawrence county, Pennsylvania. There, 3 more children were born to Elizabeth. They returned by steamboat to Louisa county in 1855, where the remainder of Elizabeth's children were born.
