Georg Brey was born at Rhan (Gemeinde Döfering) in Landkreis Cham (formerly Landkreis Waldmünchen), Bavaria, Germany, to Balthasar Stangl and Barbara Brei. Georg (age 16) and Katharina Neumeier had a child born out of wedlock named Georg Neumeier who was born February 16, 1880, at Rhan.

At age 22, Georg "Bräu" signed an emigration document at Döfering on March 4, 1886, with travel agent Joseph Süss of the North German Lloyd and had plans to travel to America. Georg emigrated from Bremen on the vessel "Eider" to the port of New York on March 30, 1886. The last column of the ship list indicated the town of Geigant (county of Waldmuenchen, now Cham). His occupation was "joiner." He traveled in steerage with 15-year old Andreas Beinkofner of Geigant.

On January 8, 1891, George Brey married Theresia Liegel at St. Luke Catholic Church, Plain, Sauk County, Wisconsin. Their marriage record at the Sauk County Courthouse showed his birth place spelled incorrectly as Grahn [Rhan], Bavaria. George and Theresia had 6 children: Arthur, George T. Eulalia, Leona, Isador and Leo. Theresia died at age 36, on December 27, 1904, leaving George with 6 children to take care of, the youngest just one year old.

On August 21, 1905, George Brey married his second wife, a widow named Mary Blau Brickl Ruhland at St. Luke Catholic Church in Plain. They had no children together, however, Mary brought an adopted daughter Elizabeth Cavanaugh and her brother's son Frank Blau into the marriage.

Obituary for George Brey in the Weekly Home News (Spring Green, Sauk County, Wisconsin), July 19, 1928, page 1, column 2: Plain Resident Dies Suddenly Last Thursday. George Brey was stricken last Thursday evening while visiting with a neighbor and died four hours later. Mr. Brey was one of Sauk county's substantial citizens, respected by all who knew him. While he was troubled with high blood pressure and on two occasions had severe hemorrhages from the nose, Mr. Brey had been feeling good until the night of his death. He retired from the farm in 1920 and removed to Plain, where he helped in the meat market of Blau & Ring, where his service and companionship are missed. George Brey was born in Germany in 1864 and came to America at the age of sixteen years. He first married Theresia Liegel, who preceed him in death in 1903. To them were born five children: Arthur, George, Eulalia, Isadore and Leo, the latter dying at the age of nineteen years. In 1904, Mr. Brey married Mrs. Mary Ruhland, who with four children and nine grandchildren, survive. The funeral was held at St. Luke's church last Saturday conducted by Rev. Chas. Surgess. Relatives from a distance present were Mr. and Mrs. Jos. Meyers of Chicago and Mr. and Mrs. Isadore Brey, John Ring, Mrs. Clem Ring, Mrs Tressie Conley of Madison, Mrs. Frank Lunenschloss of Richland Center and Alfred Frick of Elkader, Iowa.
