My grampa...

I have so many wonderful memories with my grampa. One that stands out in my mind is sitting under his pecan tree cracking nuts and filling a coffee can for my mom to bring home... this would ensure that she would make Christmas cookies for Grampa and send them to him... yes, it was a bribe. My mom makes the best Christmas cookies. Grampa taught me that it was "real important to keep your energy up while working at cracking these nuts." He said that the "two for me, one for the can method works best for this." So for every one we put in the can, we got to eat two... until mom would catch us and playfully yell because we were eating more than we were keeping.

He also taught me that ice cream really was important to have in a well-balanced diet... its a dairy product. When we added a big scoop of ice cream to a slice of apple pie and sprinkled our pecans on top, now that's a well balanced meal... protein, dairy, carbs (crust), and fruit (apples). I LOVE his way of thinking! Ice cream is still my favorite treat and I have to say, I can't eat it without thinking about how I'd sit on Grampa's lap indulging in a large bowl of it with him.

He also said a small glass of prune juice each day was good for a person; and I used to drink one with him each morning when we visited. I'd pretend to like it because I wanted to be "just like him". Grampa, I did keep up with the ice cream eating, but I'm sorry... I just can't like prune juice. I've tried and I can't do it.
