I do not have any info on Peter Quint first wife. Regarding his second wife, according to the 1900 census, Pater and Margret Gnint were married 42 years or in 1858. So it appears Peter had at least two children from his first wife, John Peter (11/15/1853 - 6/18/1928) and Joseph b. 1856.
According to my records, Peter Quint was born 1830 in Louis, Russia. Kevin Rupp is the village coordinator - his grandmother was born there in 1907, and has the below records which Peter may appear. In addition, the 1834 census may give you the names of Peter's parents.

You also mention your gr-grandmother was Katie Quint Herman. I have her obit which I will email to you from Katie's memorial.

A belated thank you for the headstone photo.
This leonard was born in 1916 in Hoisington area. here is his memorial number: 22980393
I mention this because on the 1930 census, he is listed as a son of Clarence Evertt Young, and his name would thus appear to be leonard young, but the 1925 kansas census gives his name as Quint.
Just in case at some point you are able to fit him in to your line somewhere.

thank you for taking and posting the monument picture for Earnest Young.
I see you have a Quint virtual cemetery on your page, and coincidentally, or maybe not so coincidentally, Earnest's stepmother Alma had two children named Quint (Leonard and Martin) before she married Earnest's father. She also had a son named Charles Stokes.
Do you know anything about Alma and/or her family? I don't know her maiden name, for example, nor her exact date of death.
