I just discovered that Uncle Demp also had an Uncle Edward Dempsey Carroll. He was a brother to Charles Calvin Carroll and died during the civil war. He has a memorial on Find A Grave. I thought you might like to know just in case you hadn't already found it.

As for the spelling of his name, my grandparents told me several times that a lot of people used to write their names so infrequently that sometimes they might "forget" how it's spelled. The spelling I have was written by his sister Julia Viola Jane Carroll Vessels. He wouldn't have had a birth certificate. Most county archives have "death books" for each cemetery. That might be a good place to continue your search.
