Daughter of John C. and Elizabeth (Huston) Gilbert, she came to Johnson County, Missouri with her father and siblings about 1854. Her mother, Elizabeth(Huston)Gilbert had died in 1846, in Lincoln County, KY., and Sarah kept house and cared for her father and brothers. A brother, William A. Gilbert, died in 1857. Another brother, Walter Huston Gilbert, was killed while he was working in a field (on family property in Johnson Co., MO) by Union troops on September 9, 1862. Her third brother, Washington Lee Gilbert (memorial #39757230; this cemetery) served in the Confederate States of America army from August, 1862 until the end of the war.
On May 26, 1863, Sarah's only child, Thomas Jackson Gilbert was born.
Her father, John C. Gilbert died in 1868, and along with his two sons who had died previously, is buried at the Gilbert Cemetery near Rose Hill (Johnson County), Missouri.
She was married to John Maples on January 1, 1871.
Sometime after this, Sarah and her son moved, along with her brother Wash and his family, to St. Clair County, Missouri, purchasing land on Bear Creek, where she continued to live until her death in 1919. Her cause of death is listed on her death certificate as being "cancer of the sub-maxillary gland". The death certificate was signed by J.W. Murray, M.D., of Quincy, Missouri. Her burial date is given as October 29, 1919.
