Emma was the owner of "Mrs. Murphy's Lunch Counter," and the sister of Charles A. Smith. Her great niece Betty Jane Creely Gallegos has a great childhood memory of taking hot dinners to her great-aunt at the end of Emma's work days. The hot meals was prepared by Emma's sister-in-law Delia and delivered by Betty... "My job was to get Aunt Emma's dinner to her before it was cold, some times I would run so fast to her store that I would almost fall, but I never did! When I got there Aunt Emma would take a taste and say ""Still hot...get yourself a soda Betty Jane!"" and I got to pick whatever soda I wanted!" Even though though Emma struggled with heart disease and hypertension most of her life, she continued to manage her business until her death.
