This is consistent with her age in all censuses except the 1900 census which indicates she was born Jan 1849.
She married Lastie Rozas Jr in a church ceremony on 18 Feb 1862 with records from SWLR CD as follows:

She died sometime after the 1910 census which found her in the household of her son "Edack" Rosa and his family; she is listed as Celestine Rosa, age 71, widowed.
