Arlene Marcella Anibal of Bend, formerly of Eugene, died March 17 of age-related causes. She was 87.
Arlene was born March 17, 1917, in Minerva, Ohio, to Clifford and Zillah Summer Niederhiser. She married Richard Pfeiffer in Ohio in 1936. They later divorced. She married Vern Anibal in Toledo, Wash., on Dec. 14, 1947. He died in 2000.
She grew up in Alliance, Ohio. She moved to Oregon in 1945 and lived in Medford, Corvallis and The Dalles before settling in Eugene in 1961.
She was an active member of the Seventh-day Adventist Church wherever she lived. Many church members in Eugene and around the state will remember her as a talented singer.
Her interests included vegetarian cooking and nutrition, and she was instrumental in starting The Vegetarian Restaurant in Eugene in the 1960s. She also taught vegetarian cooking classes at her church and nutrition classes at the University of Oregon.
Survivors include a son, Brent Pfeiffer of Eugene; a daughter, Marilyn Anibal of Bend; four grandchildren; and four great-grandchildren.
