He was christened as Jorge Pablo Canovas on May 10, 1844, at the Cathedral Basilica of Saint Augustine. His parents moved the family to Jacksonville, sometime before 1850. George enlisted as a private into the Confederate Army on April 6, 1861, and was assigned to Company G, 2nd Florida Infantry Regiment, on June 4, 1861. George was describe as 5-foot 6-inches tall with dark hair, dark eyes, and a dark complexion. After the war, he married Diannah Greene on July 5, 1865, in Duval County, Florida. In 1870, they were living in Sanderson, and he ran a store there. In the mid-1890s, missionaries were teaching in his area. He met with them on several occasions and was baptized into The Church of Jesus Christ of Latter-day Saints on September 8, 1897. His wife and most of his family also joined. He was ordained an elder and, later, a bishop. Some local men, who ardently hated Mormons, attacked and killed him when he was returning home from a church meeting on Sunday, June 5, 1898.
