Thanks to fellow Find A Grave member for the following information; "Although the gravestone says 1739, until 1752, January was the 11th month of the year in the old calendar, so he actually died in 1740. As confirmation, Simon wrote his will on 26 October 1739, so he could not have died 9 months before he wrote his will."
In other words, the January in which SImon died was at the time counted as the 11th month of 1739. When the calendar changed in 1752, that January became the first month of 1740 as the start of the new year had been rolled back two months. The month in which Simon wrote his will was October, the 8th month of 1739, and January was the 11th month of that year. When the calendar (still in in use today) was shifted in 1752, that January became the first month of 1740.
