The son of Philip Hess, the 1860 census has George Hess a resident of Reading Township, Adams County, Pennsylvania, but he claimed he was working for Solomon Hess (relationship, if any, unknown) in nearby Warrington Township, York County, at the time. He was a laborer by trade and stood 5' 10" tall with light hair and light eyes.

A Civil War veteran, he enlisted and mustered into federal service at Harrisburg August 9, 1862 as a private with Co. F, 130th Pennsylvania Infantry. At the battle of Antietam on September 17, 1862, a shell fragment struck his left leg three inches above the ankle, although his service records do not reflect that. That is likely because the fragment ripped his pants but left no scar for future surgeons to find. Other accounts claim a shell fragment struck the stock of his rifle and drove it into his leg, badly bruising it. He also claimed to have lost the hearing in his left ear at the battle of Chancellorsville, which is feasible given that the regiment was supporting an artillery battery. He was honorably discharged with his company May 21, 1863.

He married Nancy Elizabeth Sheaffer August 13, 1871, in Bendersville, Adams County, and fathered Minnie (b. 01/22/72, d. 05/04/73), Harvey Sylvester (b. 10/05/72), Samuel C. (b. 03/04/77), William E. (b. 01/09/79), Christian W. (b. 02/28/82), Hettie J. (b. 04/19/85), and Emma E. (b. 02/26/89). He died in Franklin Township, York County, of "senile gangrene with "hypertrophy of heart" a contributing factor. Nancy died June 25, 1935.

His death certificate reports a birth date of June 22, 1843, based on an age at death of 68-11-23. However, birth dates on Pennsylvania death certificates for those born prior to January 1, 1906, are unreliable. The birth date on the certificate may or may not be correct.
