Georg Bieritz was born near Hannover, Germany. As a boy, he lived with his parents in Avendshausen, Lower Saxony.

He was united in marriage to Caroline Strohmeyer, who lived in nearby Stroit, Lower Saxony. During their early married years, they lived in the house of Caroline's father in Stroit. Georg and Caroline had one son who died while they lived in Germany: Heinrich Wilhelm was born August 1, 1859 and died December 2, 1859.

In 1868 Georg and Caroline emigrated to the United States, sailing from Le Harve, France and arriving in New York City on June 22, 1868. They were accompanied by their three children; Hermine Caroline Wilhelmine (born September 4, 1862), Hermann (born August 29, 1865), and Georg Bieritz (born January 10, 1868). The family settled on a farm on Lisbon Road in Fox Township, Kendall County, IL. Georg and Caroline joined the Immanuel Evangelical Lutheran Church in Yorkville, IL.

While in Illinois, Georg and Caroline had five more children: August Wilhelm (born April 6, 1877), Dorothea Karoline (born March 26, 1870), Friedrich Andreas (born June 14, 1872), Heinrich Ernst (born September 9, 1879), and Louise Carolyn Bieritz (born November 26, 1874).

Georg was survived by his wife, Caroline; his sons: August Wilhelm, Friedrich, Hermann, and Heinrich Ernst Bieritz; and his daughters: Wilhelmine, Dorothea, and Louise Bieritz. He was preceded in death by his son, Heinrich Wilhelm in 1859.

Funeral services were held on November 9, 1881, at Immanuel Evangelical Lutheran Church with the Rev. J.H. Doermann officiating.
